we started out wanting to just make a molasses cookie for December and ended up with 11 more holiday themed cookies. this original goal was a gingersnap that didn't snap... a gingermoist? that's a bad name so we're left with what we named this cookie. it's got extra ginger, molasses and a touch of nutmeg and black pepper to make it snap on your taste buds and not when you take a bite.

ok those who know what pandan is pls skip ahead. pandan is a leaf often used in southeast asia and known for it's vanilla like qualities. it has a subtle grassy, herby, popcorny, vanillay flavor that's unlike anything native to western soil and pairs perfectly with coconut.

stop skipping if you’re skipping the description. this cookie is chocked full of pandan extract, and maybe some food coloring, along with shaved coconut.

snickerdoodle cookies are often referred to as a holiday cookie, but we felt they needed a bit more oomph, so we subbed the cinnamon for five spice… and added even more five spice to that :) this girlie is clove heavy, but in all the right places.

everyone loves chocolate and everyone loves peppermint, especially during the holiday season. alright, it's not a shock to add them together, but ours has dutch processed cocoa in it so it's better (deeper and more nuanced) than the typical dull milk chocolate peppermint mix.

every holiday fair has that one stand right outside the entrance (fire hazard if inside?) that smells up the entire area with wonderful, buttery and caramely confections available in giant popped bags. we're not saying don't support those popcorn people... but also... these cookies are packed with caramel and corn, plus they don't come in the largest snack bag you've ever seen.
